I like the concept of the whole cryptomator software and I think it would be very beneficial for me. However, the iOS app hasn’t been updated for 5months, and has me a little concerned about the ongoing support/operation of the app. Is there a reason for this?

The reason is that we’re currently focused on a complete rewrite of the iOS app so that it’s based on the Files app. I know that it’s not ideal that there hasn’t been an update for quite some time now but we’d like to only release hotfixes if necessary before the major update gets released.
