How can I get specific lost Data in the virtual AUTOMATOR Volume by using Time Machine ?
You can not restore the data from within the mounted drive, as it is (usually…?) not backed up by time machine at all.
However, if you know the date a deleted file still existed, you can restore your entire encrypted vault directory (the one containing the masterkey.cryptomator, d and m). Before doing so, you might want to make a copy of the current state, or course. 
Then you can unlock the restored vault and access those files.
