Where can one find a doc describing step by step how to install Cryptomator CLI on Centos 6 & 7, please?

There is no installation documentation because the CLI app is released as a jar package, meaning that you only need to download it and can afterwards execute it on the command line (assuming that at least JDK 11 is installed). See the Download and Usage in project README.

As it is not mentioned Cryptomator für Linux does not have to be installed beforehand, right?

That is correct, it does not need to be installed.

CLI seems to have an issue with folders:
When I try top copy a folder tree to cryptmator, it creates 0 Byte files instead of folders.
Of course centos fails to copy the full tree.

CLI throws plenty of the following:
