I am using Linux Mint and have tested the AppImage, FlatPack and am now running the PPA. All behave the same:
After installation, when creating a new vault, I want it to be on another partition, which is mounted under /mnt, but the Desktop App doesn’t show me /mnt and /media at all.
I tried to create a symlink but wasn’t successful with that either.
My Nextcloud is on a different partition, and I am happy for any solution!
Same issue here. The symlink is just grey and cannot be selected. I guess it has something to do with user rights. In my case /mnt is root and root is not shown in the Cryptomator application.

One option that might work is you could run C as admin.
The better option would be to Grant your user account permission to the specific Mount point that you want to use under /mnt.
You can create a new group called vault. Add the users that need access to the vault and then add that group to the vault folder.
