I use a notebook with Linux, a MAC and a Windows 10 computer. Can I access the same safe simultaneously with several systems? For example, upload pictures with the Linux notebook, download videos with the MAC and edit files with the Windows computer - all at the same time?

This depends mostly on your sync software, but from the side of Cryptomator the answer is yes.
Cryptomator only encrypts your files,but has a conflict resolver included. But it does not offer any upload/sync feature. For synchronisation your sync client is responsible.
