Is it possible to automatically upload old and new photos to cryptomator in iOS app?

You can do that since iOS shortcut integration. (see documentation)

Like other apps such as Dropbox, a Camera Upload button inside app.
No. As I said, this is done via iOS shortcuts app. There’s a guide in the documentation.
