I successfully tested the app on MacOS and Win. Unfortunately I do not understand the functionality on iOS.

Cryptomator for iOS (and also Android) is indeed different to the desktop application. The desktop application runs 100% locally on your filesystem (even if the target location is synced with a cloud storage) but this doesn’t really work on mobile devices because they typically don’t have an open filesystem. That’s why Cryptomator is able to connect to the most common cloud storage services directly.
I’m not so sure what you mean by “mail and password”? What kind of cloud storage service did you try? Let’s say you’re trying to unlock a vault that is inside your Dropbox account, you have to log in to your Dropbox account.
